Soba means buckwheat noodle, long, thin, brown noodles served either in a hot soup or with a cold soup.
Soba is general Japanese tradition food like udon.
Here is a recipe, but mastery of skills is necessary to make delicious soba.
Soba is traditionally eaten on New Years Eve in most areas of Japan, a tradition that survives to this day: Toshikoshi soba.
People eat "Toshikoshi soba" because they wish to live like soba, thin and long.

Hi Kota. Thanks for the kind words about my blog. You have a nice site as well, and I would be happy to provide a link to your blog from mine. Tell me a little about yourself though...I love meeting new friends online, and learning about other cultures. Are you a potter yourself? Do you live in Japan?
All the best to you!
